Short but Sweet Life

Oatmeal Craison Cookies

A big shout out to Aunt Brenda for passing down this recipe to me. It is a family favorite!

You Will Need:

  • 1 1/2 c flour
  • 1 t baking soda
  • 1/2 t salt
  • 1/2 t cinnamon
  • 2 1/2 c old fashion oats

  • 8 oz unsalted butter, softened
  • 1 c packed light brown sugar
  • 1/2 c granulated sugar

  • 2 large eggs beaten lightly
  • 1 T honey
  • 2 t vanilla

  • 1 1/2 c dried cranberries

Directions:

Preheat your oven to 350 degrees.

Mix the dry ingredients together and set aside (flour, baking soda, salt, cinnamon, old fashion oats).

Beat butter and both of the sugars until light and fluffy.

Add eggs, scrape down the sides of the bowl, add honey and vanilla, and beat until blended.

Add flour mixture 1/2 cup at a time, beating each until combined.

Stir in cranberries, BY HAND.

Drop dough by tablespoon about 2 inches apart.

Bake until cookies are soft and no longer wet.

9-11 minutes.

Let them finish cooking on the baking sheet before transferring to a cooling rack.

Lastly, I want to remind my beginner bakers out there not to feel bad if you mess up the recipe. It is super common, even with someone who bakes all the time, to forget something or mess up now and then. While making these cookies once, I LITERALLY forgot the oats…they are oatmeal cookies! Yes, that is just sad. My recommendation for all of you is to bake one cookie by itself at the beginning to make sure you didn’t leave anything out. It also is beneficial because everyone’s oven is different. Some bake faster than others. This allows you to gauge your oven with the recipe and only put one cookie in jeopardy instead of 12!
